The primary problem with this will be that it will be 100% lean, with no fat tissue. While it will be healthier, in theory, it will also have little to no taste and absolutely no texture worth eating. Hence why they would have to inject minerals and flavor to make it somewhat palatable, and it can only really be sold as sausage.
