Also, since 1.7 or so Notch has implemented mushroom "reproduction" whereby blocks with a light level below X (I don't know the number off the top of my head) with mushrooms on the adjacent adjacent block can spawn mushrooms. Leave this undisturbed for long enough and the whole cave will be filled.
