Offense is not merely “not liking something”. An offense is a transgression, something that steps beyond accepted norms. Why the fuck else do we have the phrase “criminal offense” and “offender” to refer to someone that breaks the law?
And sure, not all offense is created equal (for example, if you are genuinely offended by pickles then there is no real empathetic pull for others to cater to your sense of injury and maybe you should just stop worrying about dicks so much and enjoy the delicious phallic treat), but if, say, a black person is going to take offense at your oh-so-funny joke about black lives matter while unarmed innocent black men continue to get shot by cops, or a woman is going to be offended by your knee slapper that makes light of rape and how, nudge nudge, chicks are just asking for it, then FUCK YEAH you are one tone deaf privileged motherfucker.
If you give words power over you, that’s your weakness, your problem. If someone makes a racist joke, that’s their action and it reflects on the quality of their character and who they are. It’s not an injustice to you unless it’s personally defamatory and demonstrably causes you harm. “Criminal offense” has a qualifier there, doesn’t it? It speaks to an action with quantifiable consequences that go beyond hurt feelings. “Offender” can refer to a criminal offender or someone who’s simply rude. I don’t know where you are, but in the US you don’t have a right to not be offended.
Words, my dear deluded motherfucker, HAVE POWER! For fuck’s sakes, why the hell do you think the first thing that authoritarian regimes do is clamp down on political satire? Mockery and belittlement do more to deflate power than any number of those guns you Americans are so strangely attached to. MLK’s words are what dragged civil rights kicking and screaming to a place where overt and outright discrimination were finally rejected. Gandhi’s words helped drive the (at the time) world’s biggest colonial power the fuck out of India. Hell, some fucking hippy said some shit 2,000 years ago and they nailed the bastard (literal) up on a cross for it and to this day revere the fucker as the son of God. Don’t tell me words don’t have power.
So maybe YOU are in such a sublime state of enlightenment that words have no power over you and you can appreciate jokes about greedy Jews and lazy blacks for the masterpieces of wit that they are. But to claim that those words are not going to impact or influence anyone else’s worldview in any way shape or form is bullshit of the lowest order.
Really, what is the ultimate GOAL of these complaints and arguments; What is the desired outcome? To prohibit these things from being said? To prohibit these things from being thought? To prohibit such people from hurting the feelings of the offendable? I believe if you think it through, you’ll realize the ability to litigating against thought and speech can be easily twisted to make virtually anything illegal, such as pickles.

The reason I’m arguing as I am is because your points, and the original post, all point their indignation towards the fact that such things are said, rather than directly at what is said. In other words, the offense is taken at the act of making offense rather than the offense itself.
Why is this?
Because the offensive content given in example is so self evidently wrong or immoral. It would simply be seen as stating the obvious to point this out, so the argument is not made at the central point of the matter but rather at the action of stating something evidently wrong.
It’s in the same vein as someone who doesn’t get sarcasm or hyperbole pointing out that it has not, in fact, been a million years since I last saw them.

No one agreed with him or disagreed with him, they just tried to ignore him because he was the only one there who wasn’t extremely busy for some reason. One day, he was doing off about how it was unfair that he wasn’t allowed to say the n-word. “Black people say it.” “It’s just a word it’s just sounds, why should sounds offend people.” etc. etc.. I was in the middle of trying to solve a very very very difficult problem, and in frustration, I said, “Joe, it’s not illegal to say. You don’t say it because you sound like white trash.” He marched straight to the HR office to complain, then whined about how I discriminated against him for months. tl;dr people who complain about political correctness gone mad can dish it out but they can’t take it.
