Prey have eyes on the sides of their head to have a greater ability to see enemies from all sides.
Predators have them facing forward to provide the necessary depth perception to tell when to strike.
Saru is a predator.
Pfffft! Your earth-centric evolutionary biology has no relevance here. On Saru’s home planet, prey have eyes that face forward in order to distract predators from the fact that his steepled fingers look like two erect penises engaged in frotage. Fact!
