There are more people offended by “Happy Holidays” when they want to hear “Merry Xmas” than there are the other way around. Some people want to bogart the season, and they want to make it look like rejecting said bogarting is some out-of-control PC thing instead of the sanity of sharing that it is.

I sorta like this; quick easy non denominational response I don’t have to think about.
