They’re called canulas, and allow one to collect samples directly from the rumen for analysis. Some of the scientists where I work are engaged in research like this. (I live smack-dab in the heart of beef country.)
The video lacks a full picture of the living cow and the woman sticking her hand in it. The closeup shot is just too “easy” to fake for 15 minutes of Internet Fame.
But then again… considering the size of the U.S. meat industry, this would make perfect sense.
I don’t think I should have to run through the digestive process to back that up but this would simply kill the damn cow. Let alone the risk of infection.

I’ve looked up close at one of these at CSU. You could look inside and see a sloshing wave of digesting cud. What disgusted me the most was the fly that would occasionally fly in and out of the hole.
Also, this is fuckin awesome. Now if we did it to polar bears [which logic would conclude that they are really really cold inside] we could store frozen hamburger IN POLAR BEARS. And beer too.
I don’t support PETA and I don’t eat meat because I don’t want to support the need for scary shit like this. And after a year, meat just doesn’t even sound appealing anymore. At all.

I don’t see how the cavity allows for the gaseous element ordinarily necessary to digestion to function nor does it make any sense that the cavity does not become infected. They must pump them full of some nasty stuff to take care of the infections. Still can’t figure out the digestion though.

Yeah this is accurate, though normally they have a plug so there isn’t a large gaping hole in there. We have a bunch of these at the University I’m at right now.
